Spanish Gazpacho Recipe

As many other Spaniards, I often find the British Summer weather to be... Insufficient.

I miss the sun, the heat, the lively streets of Madrid and... Oh boy! I do miss my mother's Gazpacho.

To some of you, the idea of a cold tomato soup as a meal starter or snack might seem somewhat adventurous. But trust me, it is not only full of anti-oxidants and a 100% vegan, it is also addictive. (In fact, I am drinking a glass of Gazpacho as I type. And this is my third today! Fourth now!)

Here in the UK, I have found that Waitrose sell a "ready-to-drink" version made by the Spanish manufacturer Alvalle, which is quite tasty and not crazily expensive.

However, the advantage of making your own, is that you can control the texture and flavour, and tune the proportion of the different ingredients until you reach your master recipe. This is my mother's. Enjoy! (Gracias Mamá)

Spanish Gazpacho Recipe  (Serves 4)

Ingredients
  • 8 ripe tomatoes (approx. 750g)
  • 1/2 large cucumber (approx. 300g)
  • 1 Small onion
  • 1 Clove of Garlic
  • 3 Tbsp of Olive Oil
  • 1 Tbsp of Malt Vinegar
  • Cumin powder & Salt to taste

Instructions
  1. Peel and dice the tomatoes, the cucumber, the onion and the garlic clove.
  2. Add all of the ingredients to your blender/mixer container and blend away!
  3. If the resulting texture is too thick, add a little bit of water.
  4. Serve in small bowls and garnish with diced cucumber and/or diced pepper.

Time Lapse

Have you ever found yourself opening your eyes only to realise that you are in the right place with the right person, that you are completely happy but somehow you don't remember having drawn up a master plan to get to that point in life?

That is precisely what I felt this last 28th of June. Without understanding exactly how, I found myself in the grounds of a Baroque palace on the outskirts of Oxford, with Ludovico Einaudi sliding his fingers across a piano in a mesmerising harmony, and with the electrifying presence of the love of my life, holding my hand in his.

I could clearly remember images of the distant past and recent memories, but I struggled to understand how life had woven the time lapses between those images into a dream-like tapestry to take me to that precise moment. That perfect moment.

¿Te ha sucedido alguna vez, que de pronto abres los ojos y te das cuenta de que estás en el lugar perfecto, con la persona adecuada, de que eres plenamente feliz y ni siquiera recuerdas haber trazado un plan maestro para haber llegado a ese instante?

Eso es precisamente lo que sentí el pasado día 28 de Junio. Sin comprender muy bien cómo, me encontré a mí misma en los jardines de un palacio barroco a las afueras de Oxford, con Ludovico Einaudi deslizando los dedos sobre su piano mágico y con la presencia electrizante del amor de mi vida, sosteniendo mi mano entre las suyas.

Recordaba imágenes del pasado lejano y del pasado reciente, pero me era difícil comprender cómo la vida había tejido los lapsos de tiempo entre esas imágenes, confeccionando un tapiz de ensueño y llevándome a aquel instante. A un instante perfecto.






Without a doubt, life has taught me valuable lessons in recent months. I've learned that things hardly ever happen as expected and that no spreadsheet, list or Gantt chart will ever be able to encapsulate all the nuances, ironies and surprises that the future holds. My life is nothing like I imagined it would be years ago. For some reason I still can't comprehend, it is infinitely better.

Sin duda alguna, la vida me ha dado muchas lecciones estos últimos meses. He aprendido que las cosas no siempre suceden como uno espera y que ninguna hoja de calculo, lista o diagrama de Gantt es capaz de encapsular todos los matices, ironías y sorpresas que el futuro nos depara. Mi vida no es en absoluto como hace años imaginaba que sería. Sin saber muy bien cómo ni por qué, estoy viviendo una vida infinitamente mejor.

In one of my previous posts I mentioned that my life had been going through a time of change. I experienced ups and downs and faced the biggest revelation I've had in my life: my best friend and all time platonic love was in love with me too! I know it is a well-known cliche, but I could never imagine this happening to me... to us...

He did not hesitate to go all-in on our relationship, leaving his job, his house and our homeland behind, to start a new life in rainy UK with me. I am still startled that he has done all of this. For me.

These last few weekends we have commited to making the most of the british summer and to discovering new places!

En uno de mis últimos posts mencioné que mi vida estaba atravesando una época de cambios. He tenido muchos altibajos a nivel personal, aunque no todo ha sido negativo. De hecho, la vida me ha regalado una sorpresa preciosa: mi mejor amigo y amor platónico, me confesó que también tenía sentimientos por mí desde hacía tiempo! Sé que es algo muy típico, muy de peli, pero con total honestidad, jamás imaginé que algo entre nosotros fuera posible!

Superando todas mis expectativas, dejó su trabajo, su casa y nuestra tierra natal para seguirme hasta la siempre gris y lluviosa Inglaterra. Todavía hay días en los que me despierto y me cuesta creer que esto esté pasando!

Aprovechando que la lluvia parece habernos dado una pequeña tregua últimamente, estos últimos findes hemos aprovechado para coger el coche y descubrir lugares nuevos por la geografía británica!

I chose a very comfy and girly outfit, and relied on my Keds to explore the hidden gems of Southampton's Old Town! Probably not the most popular city in terms of turisitic attractions, but full of surprises and definitely worth a visit! :-)

Rediscovering Bakewell

Hidden amid the endless grasslands and vivid-coloured landscapes of the Peak District lies one of my favourite places in England: Bakewell.

At first it may seem nothing more but humble little village, with narrow streets and stone houses. But as we walk into it and discover its ancient and charming shops, it is impossible not to fall completely in love with it.

Escondido entre las praderas infinitas y salpicadas de flores del Peak District se encuentra uno de mis lugares preferidos de Inglaterra: Bakewell.

A primera vista no parece más que un pueblecito pequeño y humilde, de calles angostas y casitas de piedra. Pero a medida que nos adentramos en él y descubrimos sus comercios centenarios y llenos de encanto, es imposible no enamorarse por completo de Bakewell.




I visited Bakewell for the first time last summer, and made the mistake of leaving without tasting the Bakewell Pudding, a kind of sweet quiche, stuffed with mashed almonds and cherry jam, served with hot custard.

On this occasion we made a short stop at "The Old Original Bakewell Pudding Shop". I must admit that I have a savory tooth, but Bakewell pudding is simply delicious. So if you make a trip to the English Midlands, make sure to stop at Bakewell and taste its delicious pudding!

Visité Bakewell por primera vez el verano del año pasado, y cometí el error de marcharme sin probar el archiconocido Pudin de Bakewell, una especie de quiche dulce, relleno de puré de almendras y mermelada de cerezas, que se sirve con una crema ligeramente avainillada y caliente, llamada custard.

En esta visita hicimos una pequeña parada en “The Old Original Bakewell Pudding Shop” una pastelerĂ­a que, como su propio nombre indica, lleva años cocinando este curioso pastel. Reconozco que soy más de salado que de dulce, pero el PĂşdin de Bakewell es sencillamente delicioso. AsĂ­ que si hacĂ©is una escapada a las Midlands Inglesas, no dudĂ©is en visitar Bakewell y endulzar vuestro dĂ­a!

Change is good

As you may have realised, I have been fairly absent over the last two months. A lot has happened. 

Since my last post I have gone through a breakup, a house move and a surgical intervention. I have realised that the most complicated questions often have the simplest answers and that all great changes are always preceded by chaos.

I made my biggest life change in 2012. Having graduated with an Engineering Degree a few years before, when the economic crisis was on its rise, I had been having issues to find a job that fulfilled me. In Spring 2012 I realised that I wanted to move to the UK and study a Masters, and to later pursue a career as an Electronics or Controls Engineer in the Automotive Industry.

I knew that my decission meant that I had to leave Spain for an indefinite period of time, my beautiful and sunny Homeland, and it also meant leaving my family and friends behind. That was clearly the hardest part. 

However, later that year, my bestfriend announced that he was moving to Santa Monica to work as a Software Engineer. And knowing that he was also leaving the nest to move abroad... I guess it made things a little bit easier.


Bits and pieces of the summer of 2012, my last summer in Spain.

I moved to Oxford in September and began studying a Masters in a discipline I was passione about. Going to lectures was thrilling. My classmates were amazing. Even staying late at night doing research or completing courseworks was something I looked forward to. Everything was in its right place.

Until that phonecall. It was March 2013 I was at a pub with some friends when my phone buzzed displaying my brother's name. "Mom and Dad are getting divorced. It is serious this time".

Little I knew back then of how massive that phonecall was going to be. In virtually no time I saw from the distance how the bunch of loud and jolly people that my family was, turned into mayhem. It was all lies and remorse and hidden lifes coming to surface. My brother and I ended up caught between a war that wasn't entirely ours, and also beligerating against each other. 

Some people may think that when you are in your mid twenties, something like your parents splitting up shouldn't affect you that much. Well, in my case, it did. It harmed my family beyond repair.

I felt lost and empty. I felt that my home back in Spain was no longer my home. And I found shelter in a boy I had been dating for a few months, and in my career prospects. 

A few months later I managed to finish my Masters with Distinction and to land the job of my dreams. I was desperate to have a place I could call home, so without giving it much thought, I moved with that boy I was seeing to a small village in the Midlands.


My Masters year at a glance


From the very beginning, there was always that something that didn't feel quite right. But I tried to ignore it. I tried to focus on my amazing job, and on buying soft furnishings and little things that would make our house a home. 

2014 was a year of mixed feelings. Things for my family weren't great, but they had definitely got better. From a professional point of view, I grew so much, I felt so valued and motivated. There wasn't a single day I woke up without wanting to go to work. But I didn't have many friends in the UK and my relationship wasn't working, thought I didn't dare to word it that way at that point.

Going back to Spain for the Summer holidays meant reuniting with my best friend, who had said goodbye to his Software endevours in the West Coast, to move back and permanently to Spain.

He himself was going through a breakup, and a period of understanding where he wanted to be in life.

On my return to the UK I felt emptier than ever. Mon-Fri 8:30-5 I was happy. But the time after work just felt... Incomplete and unfulfilling. 

So I decided to take ownership of my life. I started to make changes. I opened up to people about my relationship issues, I started SassySophia.com, in an intent to enhance to share my hobbies and thoughts with other people, as well as to enhance the sassy and cheerful side of me. I started going to Yoga and devoting time to reading about ways to improve my physical and emotional health.

In December 2014 I came to the conclussion that my relationship was dead and it had been for a long time. I had hidden from the outside world in a house that wasn't a home and I had tried to convince everybody that I was content with every aspect of my life. What a load of baloney...

I travelled to Spain for the Xmas Holidays with a randomly packed suitcase, that contained no socks and underwear, because I totally forgot. I texted my brother and my bestfriend all the way to the airport, and I got offered a tissue by a completely stranger. When I arrived home, I met my family and my friends and my bestfriend gave me the most  meaningful and sincere hug in recorded history. (Gracias!)

Things didn't go as depressing as I had thought they would be. I actually had the most unexpected and amazing Christmas ever. I felt that through understanding what was wrong in my life, I could connect better with my loved ones, allowing them to get closer to me, without the need to mantain any facade.

I asked myself complicated questions and I got really simple answers. I felt supported and loved, like I had never felt before.

Xmas 2014

Returning to the UK after Christmas wasn't easy and moving houses was a bit of a logistic nightmare. But there wasn't a single moment where I felt as lonely as I had for the past months. I had people with me, friends from Spain, even colleagues from work, giving me a hand. 

Whenever I had considered breaking up in the past, I had been terrified about the prospects of moving houses and telling people that I had failed and then seeing the look on their faces. But honestly, it really wasn't that bad.

After the move, things started to settle, but then a health condition I had recently discovered became aggravated and resulted in me having to understake surgery under general anaesthetics and having to be off work for a while.

So I start 2015 having learned a super valuable lesson: Change, my darlings, is indeed good! Sometimes we keep broken things that what we cannot mend because we have somehow become attached to them. Because we can't envision a life without them. But we do need to get rid of the things that don't let us grow before they devour us.

And take my word on this. Moving abroad is tough. So fricking tough. But don't try to make things easier by rushing to find something or someone to hold on to. It won't work.





My In-Flight Essentials

One of the direct consequences of living abroad is that the start of the festive season means flying back home.

Right now I am wrapped up in a crazy spiral of packing Christmas presents, choosing festive outfits and a deciding which red lipsticks to take with me. And just as usual, I am way behind schedule! But there is one thing that is done and ready, and that is my hand-luggage. Because I am going nowhere without my in-flight essentials!




1. Soap & Glory • Mini Hand Food • £2.50 - Being the daughter of an airline pilot and a former air-hostess, and hence having always been a frequent flyer, one of the things I am sure of is that flying makes my hands extremely dry. I discovered Soap & Glory's hand moisturiser when I first moved into the UK, and it has since become my all-time favourite. I have even managed to convert my mum to it!

2. Soap & Glory • Hand Maid • £2.50 - I am not a huge fan of queing for airplane toilets, so carrying this mini anti-bacterial wash comes in very handy! Plus it smells as amazingly as hand food.

3. House of Marley • Harambe Native Headphones • £14 - Because you never know how loud your fellow passengers will be, I always take a pair of over-ear headphones. After the sudden death of my beloved Senheisers, I decided to replace them with these cuties. The sound quality is amazing and they look stunning!

4. Kindle Paperwhite • £99 - The absolute love of my life. It has built-in light, an all-mighty battery and a super easy-to-use user interface. Plus it syncs across all of the devices where I have the Kindle app installed! I am currently reading The Fire by Katherine Neville, which is the sequel to one of my favourite novels ever, The Eight.

5. Hot Pink Leather- Look Kindle Case • £12 - I take my Kindle pretty much everywhere, so having a protective case for it is an absolute necessity. My case has magnetic flap closure and auto sleep/wake function, which trust me, comes in very handy!

6. Watermelon Lip Fix • Superdry • £6 - I have a confession to make: I am a lip-balm addict. I have one in every coat, every purse and every room of the house. Even one of my work colleages found one in the pocket of the company labcoats! I simply can't stand chapped lips! Superdry's lipfix is my latest discovery and has quickly escalated into my lipbalm ranking! Plus it smells a-m-a-z-i-n-g-l-y!

7. Sheen Supreme Lipstick • M·A·C • £16.50 - I usually go with bare lips, minimal make-up and a touch of lipbalm, because when it comes to flying, comfort comes first! But when I arrive at my destination, I usually visit the toilets and suddenly realise I look like Wednesday Addams A bit of nude lipstick and some cheek make-up action (see next item!) and I am all set!

8. Blush and Bronzer Duo • E·L·F • £3.95 - This little gem is a must-have for your beauty bag. It is fairly inexpensive and has very acceptable pigmentation. I use the shade "St Lucia" which contains really close dupes of NARS Deep Throat and Laguna!

9. Retractable Kabuki • Too Faced • £30 - I have owned mine for 7 years and it's still in pristine condition. It is perfect to apply bronzer and blusher on the go, and it feels ridiculously soft on your skin!



What are your in-flight essentials?

Have you ever been given a Christmas present which, at the moment didn't seem that amazing, but that it has grown into you through the years?

That is exactly what happened to me with this red jacket. My auntie Rosa gave it to me as a gift a few years ago, and back then I thought it was perhaps too classic for me. But I believe that's precisely why it has become one of my winter wardrobe staples. And trust me sassy readers, no matter how many wardrobe cleaning adventures I embark on, this baby is here to stay!





I absolutely adore the vibrance that this jacket adds to a very basic duo-chrome outfit. I wanted to emphasise that effect by adding some matte red lipliner to my lips. I used Mac lipliner in Redd, which I reviewed last week, along with other red lipsticks, in this post.
